Director of Operations

Purpose/Position Summary:
Serves as an operations-oriented deputy to the Managing Partner, Operations of Concessions International’s largest and most complex operating locations. Oversees all or a substantial part of day-to-day operations. May directly manage a significant portion of operations, which could include any combination of restaurants/bars, typically with revenues in excess of $10 million. Develops and constantly refines business plan for assigned units. Reviews operating reports and coaches’ managers toward improvement. Selects and develops talent. Represents CI interests to airport, governmental, or regulatory representatives as appropriate. Carries out location-wide responsibilities as delegated and significant special projects.

Key Responsibilities:

1. Serves as a deputy to the Managing Partner, Operations. Monitors operations to allow Managing Partner, Operations to place greater focus on strategic and broader business issues. Represents the Managing Partner, Operations and CI and Affiliates in meetings and on committees as assigned.

2. Provides overall guidance and coaching to operating managers and employees. Monitors business performance. Provides analysis and advice to unit managers to maintain and improve business results.

3. Monitors effectiveness of unit themes, menus, and pricing in generating business. Maintains awareness of airport volume and activities and incorporates into business results analysis and planning.

4. Assures compliance with brand and/or franchise requirements as applicable; coordinates promotional or cooperative advertising efforts.

5. Manages relationships with airport and local regulatory representative regarding units managed.

6. Identifies potential leaders and develop for future leadership positions. Provide unit managers with an increased knowledge of the CI business model and with basic business concepts.

7. Communicates daily with employees to get feedback, communicate the CI vision, and identify potential problems.

DECISION-MAKING AUTHORITY:
Position makes all operating decisions with respect to assigned units. Decisions regarding recipes, operating processes, pricing, etc. are reviewed with the GM or with appropriate staff specialists.

Decisions involving new units or changes in concepts of existing units are reviewed with Operating Partner. Position manages Unit Managers for assigned units.

QUALIFICATIONS:

Education:
Bachelor’s degree in hospitality management, business, food science or similar program; or graduation from recognized culinary institute, or significant equivalent experience.

Previous Experience:
Minimum of 5 – 8 years’ experience in concession or restaurant management in an airport or similar concession environment, supplemented by additional experience in restaurant or hospitality management.

Specific skills required:
Knowledge of the concession business model.
Ability to analyze P&L and sales reports and take appropriate action.
Ability to select, train, and motivate subordinate management staff.
Exceptional interpersonal skills, in dealing with other entities, joint venture partners, civic groups, and employees.

Language Skills:
Ability to read, write and comprehend instructions; create correspondence and memos. Ability to effectively communicate information individually and in group situations to customers, co-workers and staff.

Mathematical Skills:
Ability to add, subtract, multiply and divide in all units of measure, using whole numbers, common fractions and decimals.

Reasoning Ability:
Ability to apply reasonable understanding in carrying out instructions in written, oral or diagram form.
